Apple Cake

This recipe is from my pastor’s wife in NC, BB. Hers is great. Mine never turns out as well. So we’ll see how it does tonight. I checked with her to make sure I got the recipe right and I did. Also, I am not sure what to put on the top. Maybe a glaze? My mom had a good one. We’ll see.

Ingredients:
3 eggs
2 c sugar
1 3/4 c Wesson oil
3/4 c butter
3 c self-rising flour
3 c chopped apples (Granny Smith)
1 c chopped nuts (pecans or walnuts)

Instructions:
Beat eggs well.
Add sugar. Beat well again.
Add oil, butter, flour. Mix well.
Fold in apples and chopped nuts.

Cook:
In a bundt/tube pan at 325 degrees for one hour and twenty-eight minutes, covering the top with aluminum foil the last 18 minutes.
OR in a regular pan at 375 for 40-45 minutes.
Test for doneness with a toothpick.

I loved this moist cake when she made it. I wonder if last time I didn’t know that it needed to be self-rising. We’ll see how it turns out this time.

I never can get it cooked all the way through without burning. I’m going to have to do that aluminum foil thing I’ve added to the recipe. (That helps.)
