This recipe makes a lot of dough. And it is delicious. You need a 1/2 c cold coffee. The better the coffee, the better the cookies. Last time I made this, I went and got a cup at Randall’s because they were giving it away free.
1 c butter, softened
1+1/2 c sugar
1 c light molasses
1/2 c cold coffee
6 c flour
2 tsp baking soda
1 tsp salt
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1 egg
Cream butter and sugar
Beat in molasses and coffee
Mix flour, baking soda, salt, and spices together.
Add and mix well
Chill 1-2 hours
Roll dough 1/4 in thick
Cut with cookie cutters dipped in flour
Place on ungreased baking sheet
Bake at 350 for 12-15 minutes
Grama Willine gave me this recipe. I made it with my boys when we lived in the apartment in Austin. We took little cookies to the families around us. We had a lot of fun decorating them to match the people in the other apartments.
