They’re called “Spice Cookies- Gingerbread Folks” on my recipe sheet. But I always call them her molasses cookies.
The boys and I made gingerbread families for the people in our apartment one year. I thought it was a lot of fun. This recipe makes a lot, so use a large bowl. The biggest one you have unless you are a professional chef.
Ingredients:
1 c butter, soft
1 1/2 c sugar
1 c light molasses (regular will work)
1/2 c cold coffee (the cooler the better)
6 c all purpose flour
2 t baking soda
1 t salt
1/2 t ground nutmeg
1/2 t ground cloves
1 egg
Instructions:
Cream butter and sugar.
Beat in molasses and coffee.
Mix flour, baking soda, salt, and spices.
Add and mix well.
(The egg I added to the whole mix when it was getting too dry.)
Chill dough for 1 to 2 hours.
Roll dough out till it is 1/4 inch thick.
Cut with cutters dipped in flour.
Place on ungreased cookie sheet.
Bake at 375 degrees for 10 minutes.
